Crostini al Balsamico
Little Toast with Balsamic Vinegar

YIELD: about 8 servings.

INGREDIENTS:

16 Slices of French bread cut on a diagonal

3 tablespoons of extra-virgin olive oil

6 ounces of prosciutto, sliced paper-thin

2 tablespoons balsamic vinegar

6 ounces Parmesan cheese, sliced thin

METHOD:

1. Preheat the oven to 350 degrees.  On a large baking sheet, toast the bread in the oven for about 10 minutes, until crisp and golden.

2. Using a tablespoon of the oil, brush each piece of the toast. Top with a slice of the prosciutto, the balsamic vinegar and the rest of the oil. Garnish with Parmesan, arrange on a platter and serve.
